Kyle raises the Ikigai at Crystal Coast Oysters on North Carolina's Crystal Coast, where the cold, tidal waters of the Newport River create something worth waking up for. A larger adductor muscle gives the Ikigai a sweetness most East Coast oysters don't have, balanced by clean coastal salinity for a finish that stays with you.
